--model<model>

Sets the model for this session, by alias (opus, sonnet, haiku, fable) or by full model ID.

What the documentation does not say

An alias always points at the newest model in that line, so the same command runs a different model after a release. A full ID is the only form that keeps a script on one model. The flag overrides both the model setting and ANTHROPIC_MODEL.
